07 - Gently flatten each dough ball with your fingers or the back of a spoon.

09 - Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

# Expert Tips:

01 -
  • They taste like dessert but keep you full until lunch without the sugar crash.
  • You can make them while your coffee brews and have breakfast sorted for half the week.
  • Theyre soft enough to eat in the car but sturdy enough to toss in a bag without crumbling.
02 -
  • Let the melted butter cool before mixing or the egg will scramble and ruin the texture.
  • Press the dough balls flat before baking, they wont spread much on their own and youll end up with pucks instead of cookies.
  • Pull them out when they look slightly underbaked in the center, carryover heat finishes the job and keeps them soft.
03 -
  • Use a small cookie scoop for perfectly even portions, it makes them bake at the same rate and look like you knew what you were doing.
  • If you want them sweeter without adding sugar, use vanilla-flavored applesauce or toss in a handful of chopped dates with the raisins.
  • Press a few extra raisins on top before baking so they look as good as they taste.
